Replace hardcoded secret env vars in docker-compose with Infisical
entrypoint pattern. Secrets (Mollie, Google, SMTP, Listmonk) are now
fetched from Infisical API on container start. Also set LISTMONK_LIST_ID
default to 27 (new CoFi Registrations list).
